Paleo - Turkey-Bacon Meatballs with Tomato Sauce #eMeals

Paleo - Turkey-Bacon Meatballs with Tomato Sauce Ingredients 4 slices bacon 2 lb lean ground turkey 1 (8-oz) package sliced fresh mushrooms, finely chopped 1 large onion, chopped 1 T Italian seasoning 1 large egg, lightly beaten 2 T coconut oil 2 (14.5-oz) cans fire-roasted diced tomatoes Instructions Place bacon on a paper towel-lined plate; microwave on HIGH 1½ to 2 minutes or until crisp. Crumble bacon. Combine ground turkey, bacon, mushrooms, onion, Italian seasoning and egg; shape mixture into 1-inch meatballs. Heat oil in a large deep nonstick skillet over medium heat; cook meatballs 4 minutes or until browned and no longer pink in centers, stirring frequently. Remove from skillet, and keep warm. Add tomatoes to skillet; bring to a boil, and simmer 15 minutes or until slightly thickened. Add meatballs to pan; cover and simmer 5 minutes or until thoroughly heated.  Recipe Serves 6

Homeschooling Freedom

Just a quick note to say how happy I am that we are homeschooling our twins this year. There is such freedom in being able to get school done Monday through Thursday, giving us a 3 day weekend every single week!  My twins seem much more relaxed and learning is actually fun! Here are a couple of our adventures this week: The beginning of our 5 mile walk!  We had so much fun looking around the woods. Rosie girl loved going for a hike. I would love to put in a sound bite of crickets chirping here... Okay...hopefully you didn't listen to that for too long! Ha!  But that's an example of what you hear in the comments of my previous post on eating healthy for a family of 5 on approximately $40 a week.  No comments...at all.  On facebook, I got a couple of comments but asking the same thing, how do we do this??? I decided to do some research.  Lack of response means that 1. My family is rare in our struggles to feed our family well. Hunger and poverty statistics say that is not true.  2. People just don't care.  I'll give the majority of the lack of response to this.  3. This is a common problem and no one knows the answer. The cost of healthy eating

Being on a super tight income stinks when it comes to trying to eat healthy.  It is nearly impossible to keep everybody fed well on "healthy" food. Let's try and come up with a healthy meal that can feed a family of 5 on $5 a day.  I'd love to hear suggestions. The budget allows approximately $1 for breakfast.  Dinner for $5. Approximately $80 to feed a family of 5 breakfast and dinner for 2 weeks. First of all, some guidelines. Nothing pre-made, boxed, or packaged.  It contains soy. There is a severe soy allergy in this family. There are a lot of budgeting and or large family bloggers out there that make food stretch.  Just remember the soy allergy.  If we could get a snack in for the children, that would be wonderful. Being a Mom is hard!  Watching someone else be an "AMAZING" Mom on television makes being a Mom even HARDER! I love Michelle Duggar but dang, she made me feel like an absolute failure when it came to my own mothering skills.  Where Michelle D. is soft spoken, I am LOUD!  Where Michelle D. seems to have everything in control, my life can be total and absolute chaos! And I only have 4 children...and there are time I want to scream and run away...yes, I said it.  I am not a perfect Mom.  No part of my parenting would probably earn an award in the Mommy Olympics.  I have good days, I have bad days, I have REALLY bad days!  But I do love my kids!  With every last ounce of my being.  But what does that mean? Vegucated Challenge-Day 1

Tori and I sat down and watched Vegucated last night.  It was my second time watching, Tori's first.  After watching this movie, its hard not to react to the horrific treatment of animals in the large companies and slaughterhouses. Our hearts were broken and that made us decide to make a big decision. Tori and I will be going Vegan for 6 weeks, starting today.  This is not going to be easy as we are both meat eaters.  We are full on carnivores!  We aren't just doing this because of the atrocious treatment of the animals but also because of the way we want our bodies to feel and look.  We'll be sharing with you a weekly vlog on how it's going for us starting next Saturday.  Be on the watch for it! I also want to share some recipes.  It will be a little interesting for us because I'm terribly allergic to soy.  There will be no soy milk coming into our house.  But good news is, I love almond milk.  I have to remember that Vegan is more than salad!
