Michelle's Chili Recipe

I love easy recipes!  Especially on super busy days or days I really don't want to cook.  Whole 30 offers a recipe for Chili that is amazing, but after a little tweaking on my part, it is a family favorite!

Michelle's Chili

Family friendly, crock pot easy meal!

I start with one whole onion and 4-6 carrots.  I try and sneak in as many vegetables as I can for my vegetable hating son!  I am not above using the food processor people!

Blend it down so there is no way a certain little man can identify any carrot or onion parts!  Learn from me, introduce your children to healthy raw vegetables as soon as possible so that prayerfully they do not develop an absolute disgust for them.

Okay, I have a little confession to make...I am a total meat snob when it comes to the meat I feed my family.  I absolutely look for the best price for Grass Fed, we don't feed our cattle or pigs soy farmers.  It's one of the things that drives me bonkers, is the claim to antibiotic free/Natural...but we'll pump them full of soy feed.  Blech!  Thank you Jesus for local farmers who really care about the meat they sell you.  Graze the Prairie is has amazing meat and extremely affordable!  I love them!  If your local to me, go to the Farmers Market on Saturdays, they are there.  So, I add a pound of grass fed hamburger and one pound of mild Italian Sausage to the crock pot.  I get my sausage from the local Whole Foods.  Now, all I've said about beef, I have had major struggles finding affordable pork that is not fed soy.  This brand does not show soy in any of the ingredients, but sadly, that does not mean they haven't been fed soy.  I have found a local farmer who does not feed their piggies soy, so I'll be purchasing from them from now on.  Oh who is that you ask?  Morning Harvest Farms!  They are also at the local Farmers Market!

Next, I put in 1 Tablespoon of Chili Powder, Cumin and Garlic and 1 tsp. salt and pepper.  I used the already chopped up garlic, but fresh is awesome too.  And one container of Victoria White Linen Marinara.  This marinara is the key!  I purchase it at Costco and the flavor is unmatched.

I put it all in my handy dandy crock pot and set that baby on low.  It bubbles and cooks all day and makes your whole house smell amazing!  Here is my epic fail...I forgot to take a picture of the finished product!  Ugh!  But believe me when I say, there is NO LEFTOVERS with this recipe!  I promise to do better next time!

Michelle's Chili

1 whole onion, peeled and chopped
4-6 organic carrots, chopped
1 T. Chili Powder
1 T. Cumin
1 T. Garlic or 3 cloves, crushed
1 t. salt
1 t. pepper
1 Jar of Victoria's White Linen Marinara Sauce
1 pound Grass Fed Organic Hamburger
1 pound Mild Italian Sausage

Place everything in your crock pot and cook on low for 6-8 hours.  You can also cook it on your stove top, whatever makes your heart happy!
